Kaye and Geoff's Recipes - Sauces


Vanilla sauce

2 cups cream		2 eggs, beaten
2 egg yolks, beaten	125 grams sugar
vanilla paste or essence
Combine all ingredients in a heavy-bottomed saucepan and heat over a low heat, stirring continuously with a wooden spoon until the mixture is thick enough to cover the back of the spoon. Remove from the heat and beat in 1 1/2 teaspoons of vanilla essence when cool. Chill.
