Kaye and Geoff's Recipes - Cakes
Date Loaf
1 cup dates, chopped 2 cups flour
1 cup boiling water 1 tsp baking powder
3/4 cup brown Sugar 1 egg, lightly beaten
1 tsp baking soda 1 tsp vanilla
1 heaped tbsp butter
1 tbsp golden syrup
Heat oven to 170°C
Line a loaf tin with baking paper
- Chop dried dates - doesn't have to be very fine
- Put dates, sugar, baking soda, butter and golden syrup in a bowl.
- Pour over boiling water and mix. Leave to cool (10-15 mins)
- Once the date mixture has cooled, add the beaten egg and vanilla and mix in well
- In another bowl, mix together the flour and baking powder.
- Make a well in the flour mixture, and add in the liquid mixture, combining everything well - you can do this by hand
- Spread into a loaf tin lined with baking paper.
Bake at 170°C for about 45 minutes or until cooked
Notes:
- I added chopped ginger to the dates
- You could add some grated lemon zest
