Orange and Pumpkin Soup (10 servings)
2 large leeks, trimmed, washed and chopped 4 cloves of garlic, chopped
2 large brown onions, chopped 2 oranges with their juice
1 tablespoon finely chopped ginger 2 cups orange juices
1 litre chicken stock 1/2 cup brown sugar
1/4 cup lemon juice 1 1/2 - 2 kg peeled pumpkin
Heat a little oil in a large saucepan and add leek, onion, garlic, ginger and finely grated rind of the two oranges. Cook, covered, over low heat until the leek is soft. Add remaing ingredients, including the juice of the oranges, bring to a boil and simmer until the pumpkin is soft. Process in a food processor until smooth. Season to taste and serve. It will freeze well in an airtight container.
